Sweet potato soup is a common Chinese dessert soup. Since sweet potatoes are so abundant in Southern China and Hong Kong this is a dish prepared often and is very affordable. In this soup the sweet potatoes are the star. Big chunks of this wonderfully starchy vegetable are featured. Brown sugar is added to bring out the sweetness of the potatoes and give the broth  more complex flavor. Ginger is added to give the soup a mouth watering aroma along with some heat for a bold kick. All three components of the soup work together extremely well and yields a sweet treat that you will want to shovel in your mouth and then go back for more. To make this amazing dessert soup you will need:



Ingredients:

  • 3 ½ cups water
  • 2 large sweet potatoes
  • 2 inch piece of fresh ginger
  • 4 tablespoons brown sugar


Direction:

Begin by peeling the sweet potatoes and cutting them into bite sized chunks. When this is done move on to the ginger. First remove the skin and then smash the ginger. You can leave it in big chunks.


Pour the water into a saucepan and bring to a boil over high heat. Once the water is boiling add in the ginger as well as the sweet potatoes. Do not reduce the heat. When the pot begins to simmer reduce the heat to low and partially cover with a lid. Cook for 25-30 minutes or until the sweet potatoes soften. During the cooking process the sweet potatoes will soak up that lovely ginger taste.


When the sweet potatoes are done add the brown sugar and stir until it dissolves. Taste the soup and add more brown sugar if desired. Once the soup is sweetened to your liking ladle the into bowls and serve. You can serve with the chunks of ginger for the aromatic quality or it can be discarded.


There is nothing like warm sweet potato soup. It is so comforting and will satisfy your sweet tooth. If there is any left over (which is unlikely) sweet potato soup tastes great cold and can easily be reheated.
